Aloo Paratha.

For the dough

Maida - 3 cups
Baking pwd - 1/2 tsp
Baking Soda - 1/4 tsp
Sugar - 1 tbsp
salt - to taste
Oil - 1/4 cup
Yogurt - 1/2 cup
Ghee - 1 tbsp
Mix all the dry ingredients together in a bowl and mix well.
Make a well in the middle and pour mix all the wet ingredients in it and knead well adding enough water to make a smooth pliable dough.
cover and let it rest for 1-2 hours.
Meanwhile u can prepare the filling.


For the filling

Potatoes - 1/2 kg (maybe 4-5 potatoes) boiled and mashed
Salt to taste
Garam Masala 1/2 tsp
Cumin Seeds crushed - 1/2 tsp
Coriander leaves - 3-4 tbsp chopped
Mint leaves - 1 tbsp chopped (optional)
Green chillies - 4-5 finely chopped
Lemon juice - 1 tsp


Mix well all the ingredients together
U will get 12 parathas frm the dough...divide the dough into 12 portions and the filling also
Roll each ball into small circle and place the ball of filling and bring all the sides of the dough together to the top, covering the filling.
Bunch it up together, pinch it so that it closes completely
Now very gently roll the filled dough making sure dat the filling doesnt pop out
Place the paratha on your heated pan and cook both sides till done.
Brush some oil and flip the other side and cook ,it will be finished within 1 or 2 minutes
Serve hot with yogurt and a piece of chicken fry will make it soooooooo yum....
