BUTTER BALL COOKIES
1/4 teaspoon salt
1 cup (226 grams) unsalted butter, room temperature
1/2 cup (100 grams) white granulated sugar
1 teaspoon pure vanilla extract
Filling:
1/2 cup raspberry jam/mixed fruit jam
Garnish:
1 1/2 cups (300 grams) granulated white sugar
In a bowl whisk the flour with the salt.
In another beat the butter until smooth . Add the sugar and beat until creamy and smooth . Add in the vanilla . Gently stir in the flour mixture just until incorporated. Wrap the dough in plastic wrap, and chill in the refrigerator for 2-3 hours, or until firm.
Roll the dough into small balls that are about the size of a lemon. Place the balls of dough on a parchment lined baking pan and place in the freezer for about 30 minutes. This will make the dough very firm which will prevent the cookies from spreading during baking.
Preheat the oven to 375 degree F (190 degrees C) and place the oven rack in the center of the oven.
When the balls of dough are firm, remove from freezer. Bake in preheated oven for about 10 to 12 minutes or until the cookies are firm but not brown. Remove from oven and place on a wire rack to cool.
Place the sugar on a large plate. While the cookies are still a little warm, lightly roll each cookie in the sugar. Place on a wire rack to finish cooling. Then take one cookie and spread a little raspberry jam on the underside of the cookie. Top with a second cookie to form a sandwich. Repeat with the rest of the cookies.
SWIRL COOKIES
70g butter, soft
100g icing sugar, sifted
150g plain flour, sifted
10g cocoa powder
1 egg
Method:
In a bowl add the soft butter and whisk until light. Then add the egg and whisk further.
Divide the flour and icing sugar together in three portions and add each portion one at a time gradually whisking til it all comes together in a form of a dough.
Knead the dough on a floured surface. Then form a ball and cut in half so you have two doughs instead of one. Keep one dough on the side and the other add to it the cocoa powder and knead till all mixed.
Flour the work space your using and with a roller roll out the white dough. Then do the same to the cocoa dough but making sure the cocoa dough is a little less bigger than the white dough.
Lay the cocoa dough on top of the white dough and slowly using cling film beneath the white layer roll the dough to form a log shape. When log shape appears twist the 2 ends of the cling film and chill the dough for 30 minutes until firm.
With a sharp knife after 30 minutes cut the cookies slicing down wards placing them on a greased or lined with parchment paper tray.
CUT - OUT SUGAR COOKIES
1.Unsalted butter - 1 cup
Sugar - 1 cup
2.Egg yolk - 2
3. Vanilla essence - 1/2 tsp
4.Maida - 2 1/2 cup
Baking pwd - 1/2 tsp
Salt - a pinch
METHOD....
Preheat the oven at 350 degree
Soften the butter and combine sugar and butter together
Add the egg yolks one at a time and beat slowly
Add vanilla essence
In a bowl seive maida + baking pwd + salt
Mix maida with the butter mix and divide it into two equal parts and refrigerate for 1/2 an hour
Dust ur work area with maida and roll out the cookie dough and cut into shapes of ur choice and bake about 6-7 minutes...
Homemade BourBon Biscuits
(tis taste almost lyk the bourbon .due to lack f tym n patience mine turnout lyk tis but donn mind the shape bcz the taste is relly gud ;)
Ingredients:
1 cup all purpose flour (maida)
1/4 cup unsalted butter
1/3 cup sugar
1/4 tsp baking soda
1 tsp baking pwd
1 tbsp cocoa pwd
1/2 tsp vanilla essence
1 tsp golden syrup OR honey
2-3 tbsps cold milk
sugar for sprinkling
For filling:
1/4 cup butter
1/3 cup icing sugar
1 tsp cocoa pwd
few drops vanilla essence
1. Sieve together flour, baking soda, baking pwd and cocoa. Keep aside.
2. In a bowl, cream together butter and white sugar until well blended. Add vanilla essence and golden syrup and combine.
3. Mix in the sieved ingredients with butter mixture and combine to form a soft dough. Add little milk to form the dough.
4. Place butter or plastic wrapping sheet on the work surface, sprinkle some flour and roll the dough into a large roti. Use a knife to cut into rectangle shape pieces. Use a toothpick to prick over the rolled out rectangle. Sprinkle white sugar on top of each rectangle.
5. Grease a baking tray and place each rectangle shaped dough on the tray and bake in a pre-heated oven at 155 degrees C for 14-15 mts or till the edges are toasted. Once baked, the cookie will feel soft on touch but once cool it will harden. Cool for 3 mts before proceeding with the filling.
6. Repeat the process with remaining dough.
7. Mix all the ingredients called for ‘filling’ and using a spatula spread some filling over the underside of each biscuit and sandwich using another biscuit.

BEAT BUTTER AND SUGAR WELL WITH WOODEN THAVI.THEN ADD MAIDA VANILLA ESSENCE N MIX WELL .MAKE A BALL AND PAT THEN CUT WITH BISCUT CUTTER .(U WILL GET DIFFERENT SHAPE CUTTER)CUT IT AND PLACE IN BAKING TRAY DONT KEEP EACH ONE CLOSER KEEP A DISTANCE .HEAT OVEN IN 100DGREE AND BAKE FOR 12 MNTS WEN IT IS LITTLE GOLDEN BROWN TAKE IT AND SERVE
BUTTER FLY COOKIES
ingredients
puff pastry thawed to room temprture
sugar gud amnt to sprinkle ;)
roll the puff pastry into 1/4 inch tick rectangle .Sprinkle some sugar on top . Turn the sugar side of pastry sheet to downward. Roll frm both sides to centre n cut strips of pastry sheet width wise about 1/3 inch . Sprinkle more sugar on top n Bake 180 degree tilll done
